The places I've seen in Fukuoka City are by and large Kaiten places. Not saying others don't exist, but I'm stunned they aren't as visible as Kaiten. I'd love recommendations, if you have them!

If you think you're in a region from which sushi is "pretty much absent," you just haven't looked hard enough for the small, family-run, hole-in-the-wall sushi places that serve the freshest fish on warm, hand-shaped rice. Fukuoka has the second largest fish market in Japan, and you can get pretty much any type of fish you like. I think the whole sushi culture here is very different from America- it's not really trendy, or glamorous, unless you're hitting up one of the Tokyo restaurants of a world-renowned sushi chef who charges you 3man for 10 pieces of hand-selected sushi. I think sushi is certainly a big step up from izakaya culture, but it's often saved for celebrations, family gatherings, or intimate get-togethers (from my experience, going to sushi with Japanese people).

Real sushi is alive and well in Fukuoka, it's just not as showy as the locally famous cuisines :) If you want recommendations, let me know!
